Sun, Sea & Spice: How Seychelles Is Turning Creole Cuisine into a Global Culinary Experience

Tourism Seychelles has launched Sun, Sea & Spice: The Magic of Seychelles Creole Cuisine, a limited-edition cookbook that celebrates the islands’ rich culinary traditions and positions Seychelles as a destination for food lovers worldwide.

Unveiled on Friday, 27 February 2026, at the Tourism Department Headquarters, the publication was presented in the presence of Minister for Tourism and Culture Mrs. Amanda Bernstein, Principal Secretary for Tourism Mrs. Sherin Francis, and key project contributors.

Curated by the Tourism Seychelles Content Creation Management Unit in collaboration with Grandma’s Savoir Faire—renowned home cooks who preserve Seychellois culinary traditions through cooking classes at Domaine de Val des Près—the cookbook features 50 traditional and contemporary recipes that reflect the depth and diversity of Creole cuisine.

“This cookbook is our way to elevate Seychellois Creole cuisine to its rightful place,” said Minister Bernstein. “Our cuisine tells the story of our history, our diversity, and our deep connection to the land and sea. Through Sun, Sea & Spice: The Magic of Seychelles Creole Cuisine, we are inviting the world to experience Seychelles through its flavours.”

The book blends cultural insight with practical cooking guidance, offering a wide range of dishes including starters, main courses, soups, salads, sauces, chutneys, desserts, and beverages. Each recipe includes clear, accessible instructions suitable for both novice cooks and experienced chefs.

More than a collection of recipes, Sun, Sea & Spice serves as a strategic destination marketing tool. It moves beyond the islands’ well-known beaches and turquoise waters to highlight the African, European, and Asian influences that have shaped Seychellois cuisine over generations.

Produced as a premium keepsake, the cookbook will be available for sale locally, allowing residents and visitors to recreate the islands’ signature dishes at home.

The project brought together Seychellois chefs and home cooks through Grandma’s Savoir Faire, with each contributor sharing signature dishes and personal stories that reflect the evolving culinary culture of the islands.

Grandma’s Savoir Faire: Cooking and Crafts is a twice-weekly immersive experience held at Domaine de Val des Près, about 16 kilometres from Victoria. Participants learn traditional cooking techniques and crafts from local grandmothers, who share their knowledge, heritage, and passion for Creole cuisine.

With this launch, Tourism Seychelles is not only preserving its culinary heritage but also adding a bold new flavour to its global marketing efforts—inviting travellers not just to see Seychelles, but to taste it.
